Crock-Pot: BBQ Chicken with Pineapple

I. Love. My. Crock-pot. I’m trying to use it more lately because it’s so convenient and I have yet to mess something up! I chose to make chicken this time and decided on wings for a smaller summer meal. However, I’ve made this once before using chicken breasts and it turned out great as well! It’s simple, easy and you don’t need a lot of ingredients.

What you will need:

Chicken- I chose frozen wings so I could portion it out for one person but any chicken will work!

One can of pineapple (Chunks or Slices)

BBQ sauce

Directions:

– Pour all of the juice from the can of pineapple into the crock-pot, making sure the entire bottom of the pot is completely covered.

– Next, place your chicken, frozen or thawed, into the pot and grab a BBQ sauce of your choice (I chose honey BBQ). Then, coat the top of each piece of chicken in the sauce. Between the pineapple juice and the sauce, each piece of chicken will be covered in a liquid, which is necessary for slow cooker recipes.

– Lastly, add the actual pieces of pineapple to the top of your chicken. I added extra BBQ sauce to the top of them because I had a craving, but it is not necessary for people with normal taste buds.

– Turn it on and march right out of that kitchen! General rules for cooking in a slow cooker say either 4-5 hours on high, or 8-12 hours on low. Based on the time you prepare your meal and the amount of chicken you’ve used, use these rules as a guideline.

– Go run your errands, watch your TV shows, catch some sun, or whatever you like to do now that you have so much free time. Then based on your heat level and timing, enjoy a great meal and pat yourself on the back for a job well done.
